Veal with Eggplant

Ingredients

  • 600g thinly sliced veal
  • 3 cups fresh breadcrumbs
  • 3 eggs
  • 1/4 cup olive oil
  • Tomato sauce: 1/2 red onion, 1 clove garlic, 2 anchovy fillets, 1 can chopped tomatoes, 1/2 cup fresh basil and fresh oregano - chopped, 1 tsp sugar, 1 tsp salt
  • 1 eggplant, thinly sliced + Olive oil
  • Parmesan cheese

Instructions

  • 1. For breadcrumbs pop 4 slices of bread in the food processor. Pre heat the oven to 180 degrees
  • 2. crumb the slices of veal and egg and bread crumbs and leave to stand
  • 3. To make tomato sauce, sauté onions, anchovies and garlic until soft
  • 4. Add the tomatoes, herbs, salt and sugar
  • 5. Add 1 cup water
  • 6. Simmer sauce until reduced
  • 7. In a pan add the olive oil and heat.
  • 8. Brown each piece of crumbed veal until golden but not cooked through
  • 9. Lay the veal in a baking dish.
  • 10. In the same pan cook each piece of eggplant until golden and soft.
  • 11. Spoon some tomato sauce over each piece of veal. Lay a slice of eggplant of each piece of veal and another spoonfull of tomato sauce to finish.
  • 12. sprinkle the whole lot with a generous handful of parmesan cheese.
  • 13. Cook in the oven for 5-10 minutes, until the cheese has melted. By this time the veal will have finished cooking.
