Ingredients

  • 4-6 chicken thighs on the bone
  • 3-4 potatoes cut into 2 cm chunks
  • 1 red and 1 green pepper / capsicum - cut into chunks
  • 1 chorizo - uncooked sliced into disks
  • 1 red onion cut into chunks
  • Garlic powder - 1 teaspoon
  • salt and pepper
  • 2 sprigs rosemary- finely chopped
  • Olive oil

Instructions

  • 1. Pre heat your oven to 180 degrees celsius
  • 2. In a large bowl add all your vegetables and chicken pieces and sprinkle with the garlic, rosemary, olive oil and salt and pepper. Mix thoroughly.
  • 3. Arrange vegetables in the bottom of the baking tray and lay the chicken on top.
  • 4. Roast for 40 minutes until the chicken is cooke through and golden brown.
