Tray bake chicken marylands with potatoes, olives and haloumi

This has been adapted from another recipe of mine, making use of ingredients that i had available to me at the time.

Ingredients

  • 4 chicken marylands
  • Spice rub of: 1 tablespoon smoked paprika, one of oregano and a teaspoon of onion powder. Bring together with a couple of lugs of garlic oil and salt
  • 1/2 each of red, yellow and green capsicum cut into chunks
  • 4 potatoes cut into smaller chunks
  • 1 cup green sicilian olives
  • 1 packet haloumi dubbed about the same as the capsicums
  • couple sprigs rosemary
  • 1 cup white wine / or chicken stock

Instructions

  • 1. Cover the marylands with the spice rub and leave for a couple of minutes while you prep the rest of the dish
  • 2. Pre heat the oven to 180 degrees celsius
  • 3. Mix all your veg (NOT HALOUMI) in a baking tray and toss in garlic oil and salt. Pop the rosemary in.
  • 4. Lay your chicken over the top and pour in the wine / stock.
  • 5. Cook for 40 minutes and add the haloumi. Cook for a further 15-20 minutes.
  • 6. Serve with a green salad and remaining pan juices.
  • Servings : 4
