Tim’s favourite lamb cutlets

Ingredients

  • 12 lamb cutlets
  • For Marinade: 1/4 cup balsamic vinegar, 1 tablespoon seeded mustard, 1 tablespoon chopped rosemary, 2 garlic cloves, 1 tablespoon honey.
  • Sea salt

Instructions

  • 1. Lay your cutlets out in a baking tray
  • 2. Mix all your marinade ingredients together and a bowl and pour over the cutlets
  • 3. Allow to marinade for as long as you can. 20 minutes min.
  • 4. On a hot BBQ or grill cook the cutlets to your liking - usually a couple of minutes each side and rest.
  • 5. TIP - Your red meat will have a better chance of being tender if you allow it to rest to room temperature before cooking
