Three easy yoghurt dips for kids (Tzatziki, beetroot, basil)

These dips are my afternoon tea staple. Also great for school lunch boxes with a bag of chopped veggies. Either way they are healthy and filling.

Ingredients

  • For Tzatziki: 125g cream cheese, 3 tablespoons full cream natural yoghurt, 1 lebanese cucumber peeled an de-seeded, small handful mint leaves, salt to taste, 1/2 clove garlic, 1 tablespoon lemon juice
  • For Beetroot: 2 whole cooked beets chopped, 75g feta cheese, 1/2 cup natural yoghurt, salt to taste
  • For Basil: 1 cup basil leaves, 100g feta 1/2 cup natural yoghurt, 1/2 clove garlic.

Instructions

  • 1. For Tzatziki: Add all the ingredients into a food processor and blitz until smooth and creamy. Taste and add more salt or lemon juice if need.
  • 2. For Beetroot: Cut two whole beets into quarters and place them in a tin foil bag. before you close the bag add a good dash of water, if you want to make it a little posh add a lug of balsamic vinegar. Season with salt and pepper close up the bag and roast for about 40 minutes or until the beets are soft and tender. Allow them to cool. Add the beets, feta and yoghurt to a food processor and blitz until smooth - add more salt if need.
  • 3. For Basil: Once cooled peel your beets and add all you ingredients to the food processor and blitz. Add salt if need.
