Ingredients

  • 1 bunch silver beet - all white stems removed
  • 375g ricotta cheese
  • 4 rashers bacon- finely diced
  • 150g feta cheese
  • Small handful basil - finely chopped
  • 2 eggs - 1 egg in recipe 1 egg for eggwash
  • 1/2 red onion- finely diced
  • Puff Pastry- to make your own here is a recipe courtesy of BBC Food- http://www.bbcgoodfood.com/recipes/2403/roughpuff-pastry-
  • (for shop bought puff pastry i can recommend Careme)
  • Salt and pepper

Instructions

  • 1. Pre heat oven to 180 degrees and line a baking tray with baking paper
  • 2. Get a pot of salting boiling water on the stove to cook your spinach
  • 3. Finely chop your silverbeet leaves and put in to a pot of boiling - cook for about 5 minutes, then drain - Once cool enough to handle - squeeze all excess water - this is important
  • 4. In a pan cook your diced bacon and onion- set aside to cool slightly
  • 5. In the food processor add your Ricotta, feta, basil, egg, spinach, bacon and onion. Blitz until mix is combined and broken down in to a spreadable consistency. Season well with salt and pepper
  • 6. Lay or roll out your puff pastry. Spread a good layer of the mix even over the pastry.
  • 7. At one end roll the pastry up so you end up with one long log. Cut into 3- 4 sausage roll size pieces. Continue until you use up all your mix.
  • 8. Arrange pieces on a baking sheet and brush with a little beaten egg, If you like you can sprinkle sesame seeds over the top.
  • 9. Bake for 25mins or until pastry is cooked through and golden
