Slow cooker Beef, Veg and Quinoa soup

Ingredients

  • 1/4 cup garlic oil
  • 1 kg chuck steak chopped into bite sized pieces (grass fed preferably)
  • 2 carrots
  • 1 capsicum
  • 2 small zucchini
  • 1/2 cup chopped shallots - green part only
  • 1 stalk rosemary / 2 bay leaves / 1 heaped teaspoon paprika
  • 1 cup beef broth
  • 1 can chopped tomatoes
  • 1/2 cup quinoa
  • Salt and pepper

Instructions

  • 1. Heat fry pan and brown the beef in the garlic oil and paprika. Season well
  • 2. Place beef in the slower cooker
  • 3. Chop all your veg into bite size pieces and add to the slow cooker- season the veg
  • 4. Add chopped tomatoes
  • 5. Add beef stock
  • 6. Add rosemary and bay leaves
  • 7. Cook in slow cooker for 4 hours on high
  • 8. Check that beef and beef and veg are tender. Check for seasoning
  • 9. Add quinoa
  • 10. Keep cooking for 1 hour on low
  • 11.
