Raw tomato pasta

Ingredients

  • 500-600g of mixed small tomato varieties that are in season
  • 2 Shallots
  • 1 cup of grated parmesan cheese
  • 1/2 raw garlic clove
  • Small Handful both Basil and flat leaf parsley (rocket is lovely also)
  • 1 tablespoon capers
  • 1 table spoon balsamic
  • 2 table spoons extra virgin olive oil
  • salt and pepper
  • Tube or spiral pasta

Instructions

  • 1. Chop the all the tomatoes into 1/2’s and 1/4 ers depending on their size.
  • 2. Finely slice shallots
  • 3. Roughly chop herbs
  • 4. Add capers and grate in the garlic
  • 5. Dress with the balsamic and olive oil
  • 6. Boil the pasta until al dente and drain
  • 7. Toss the dressed tomatoes through the warm pasta
  • 8. Add the parmesan cheese.
  • 9. One bowl just won't satisfy!
