Peppers, feta and parsley salad

I love it in winter when you can still enjoy salads. I also love it when they have so few ingredients but still taste great.

Ingredients

  • 2 x red capsicums and 2 x yellow capsicums
  • 200g soft feta cheese like danish or persian
  • 1 bunch fresh italian / continental parsley
  • Extra Virgin Olive Oil
  • Salt and pepper

Instructions

  • 1. De-seed and cut your peppers into 1/8th’s
  • 2. Ideally this part should be done on a griddle pan, or BBQ. Heat with some olive oil and char grill your peppers. In batches if you need to. Set them aside
  • 3. Pick the leaves off the parsley and leave them whole. You will need about 1 firmly packed cup.
  • 4. On a flat plate lay out your peppers. On top put the fresh parley leaves. On top of that evenly crumble your feta.
  • 5. Season with some sea salt and freshly ground black pepper.
  • 6. Drizzle with a good lug EVOO
  • Servings : 4 -6 as a side
