Jamie Oliver inspired ricotta pesto and roasted cherry tomato fettuccine

We have nut allergies in our house, this recipe is a perfect way to enjoy the flavour of pesto without making anyone sick. I also love it as i can make the sauce and keep it in the fridge and just stir it through cooked pasta anytime we feel like it.

Eat it as a vegetarian dish or service with some sliced grilled chicken breast

Ingredients

  • Two big handfuls fresh basil
  • 1 garlic clove
  • 1/2 squeezed lemon
  • salt - it needs a good pinch
  • 2 tablespoon olive oil
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1 punnet cherry tomatoes
  • 1 packet fettuccine

Instructions

  • 1. Pre heat your oven to 150 degrees
  • 2. Cut your cherry tomatoes in half and lay out on oa baking tray. Season well with salt and pepper. I also like to add a pinch of dried herbs - you could use basil, oregano, mixed herbs, itallian herbs for example
  • 3. Bake slowly for 30 - 40 minutes
  • 4. Meanwhile in your food processor add the basil, parmesan, garlic, lemon juice, salt and olive oil. Blitz until everything is broken down and like a paste.
  • 5. Add your ricotta cheese blitz until your have a creamy sauce.
  • 6. It's really important to taste now an adjust yoru seasoning
  • 7. Cook your pasta to the paket instructions
  • 8. Drain your pasta, and reserve some of the cooking water
  • 9. Stir your basil and ricotta sauce and garnish with your roasted cherry tomotoes
