Issy’s passionfruit curd muffins

Ingredients

  • 1cup passionfruit pulp
  • 125g butter
  • 1 cup raw sugar
  • 4 egg yolks separated + 2 of the whites- beat lightly until soft peaks form
  • 2 cups self raising flour
  • 1 punet fresh raspberries

Instructions

  • 1. In a sauce pan add your passionfruit/butter/sugar and egg yolks and stir well to combine
  • 2. Place on a low heat and cook for 10-15 mins stirring regularly until thick
  • 3. Set the curd aside and allow to cool
  • 4. Once the curd is cooled pour into a mixing bowl and fold in the lightly beaten egg whites
  • 5. Fold in the flour.
  • 6. divide among the prepared muffin cases and garnish with raspberries
  • 7. In a pre heated oven - 170 degrees cook for 20 mins
  • 8. Test with a skewer if not cooked leave in for another couple of minutes
