Ingredients

  • 1 x can cannelloni beans, 1 x can good quality tomatoes, 4 rashers of prosciutto (you can use bacon)- finely sliced, 1/2 red capsicum - finely diced, 1/2 red onion - finely diced, 1/2 long red chilli - seeds or no seeds up to you - very finely chopped, 1 teaspoon oregano, 1 teaspoon cumin, Parmesan cheese

Instructions

  • 1. In a frying pan fry off the onion and prosciutto until golden. Add the capsicum and chilli cook for another minute Add the tomatoes Add the dried herbs Taste before seasoning. - prosciutto is salty Season with salt and pepper. Also season with 1/2 teaspoon sugar Stir in the beans. Taste for again for seasoning Serve and garnish with shavings of parmesan cheese. Serve with your favourite bread or toast.
