Baked chicken in verjuice

Ingredients

  • 1 whole chicken cut into 8 pieces, 1 cup verjuice, 2 cups chicken stock, 1 bulb of garlic - broken into cloves with the skins still on, 1 whole lemon - cut into 1/8ths, 1/2 bunch of thyme, salt and pepper

Instructions

  • 1. Pre heat the over to 180 degrees In a large baking tray lay out the cloves of garlic and the lemon wedges. Layer the chicken pieces over the top. Layer the Thyme sprigs over the chicken Mix together the stock and verjuice and pour it over the chicken. Cook in the oven for about 45 minutes - 1 hour. I like to baste the chicken regularly and often turn the chicken pieces as well.
