Asparagus salad

Ingredients

  • 2 bunches of green asparagus
  • 1 whole tomato, de-seeded and finely diced
  • 100g feta cheese
  • 1/2 cup toasted pinenuts
  • Olive Oil
  • Balsamic vinegar
  • Salt

Instructions

  • 1. To prep your asparagus, cut the last 4 cm off the ends.
  • 2. In a hot oven toast your pine nuts until golden brown
  • 3. Put your asparagus into a pot of boiling water for no more than a couple of minutes - you really only want the asparagus to be just tender.
  • 4. De-seed and finely dice your tomato.
  • 5. On a plate arrange your asparagus sprinkle over the diced tomato, crumbled feta and toasted pine nuts. Drizzle with olive oil and balsamic. Season with some sea salt.
