Aromatic Green Chicken Thighs

Ideally you should allow about 1 hour to marinate the chicken. If you can’t allow that long try to allow 20 minutes.

Ingredients

  • 8 chicken thighs on the bone
  • 2 banana shallots (or 1 red onion)
  • 2 cloves garlic
  • 1 x 4cm piece ginger- roughly chopped
  • 1 x 4cm piece galangal - roughly chopped
  • 1/2 bunch coriander - leaves, stalks, roots - wash and roughly chop. I have also done it where i've added a small handful of basil also and its great!
  • 2 lemongrass stalks - white part only - roughly chopped
  • Juice and zest 1 lime
  • 2 tablespoons fish sauce
  • 1 tablespoon rice malt syrup
  • 100mls coconut milk

Instructions

  • 1. To make the paste: In a food processor all the following roughly chopped ingredients- shallots, garlic, ginger, galangal, coriander and lemon grass.
  • 2. Add the lime zest and juice, fish sauce and coconut milk and mix together.
  • 3. Lay out your chicken thighs in a baking dish and pour over the wet marinade. Allow to marinate for 1 hour.
  • 4. Pre heat you oven to 180 degrees and cook the chicken, uncovered for 40-45 minutes.
  • 5. Serve with your favourite fried rice, or garlic rice
