Apricot Balls

These are treats in my house, the kids love them but they are high in sugar so they only get made occasionally. I am road testing some that takes out the condensed milk and replaces it with honey or rice malt and butter. Stay tuned this one is evolving!

Ingredients

  • 500g dried apricots
  • 395g can condensed milk
  • 1 cup cornflakes
  • 1/2 cups desiccated coconut
  • Alternative to condensed milk: 1/4 cup Honey or Rice Malt syrup and 60g butter

Instructions

  • 1. In the food processor blitz your cornflakes- Take them out and blitz the apricots.
  • 2. In a bowl mix together the blitzed apricots, cornflakes, coconut and condensed milk together.
  • 3. Roll into small balls and roll in coconut.
